Come for an unforgettable learning and cultural experience including a savory lunch of your own delicious Vietnamese street food creations!
The best place to savor the real taste of Vietnam is not in any 5-star restaurant, but on the street where local Vietnamese work and eat. In this series we will establish a link between where and how various Vietnamese groups live, and how this influences how they cook and eat.
Format:
• Hands-on learning. Each member will participate in a hands-on manner, cooking and assembling dishes.
• The enrollment fee will cover all ingredients used in the course. To minimize waste, we highly recommended students bring their own plate and utensils.
• The entire series consists of 5 sessions. Participants can take the whole series or one independent session. These 5 sessions by no means cover all the street foods in Vietnam but they will give the student a good perspective and understanding of some of the frequent techniques used in Vietnamese cuisine.
• In these series we will learn about:
1. Cooking techniques for cooking authentic Vietnamese food.
2. How to make various sauces.
3. Introduction to herb use.
4. Culture and History of Vietnam.
Syllabus (Menu selection will vary seasonally):
February 28, 2009
1. Fish sauce
2. Sweet and sour sauce
3. Vietnamese eggrolls (meat)
4. Vietnamese eggrolls (vegetable)
5. Soy bean juice (if time permits)
March 14, 2009
1. Seafood noodles
2. Sweet sticky rice and beans
April 4, 2009
1. Vietnamese chicken salad
2. Vietnamese chicken congee
April 25, 2009
1. Hue beef noodles
May 16, 2009
1. Vietnamese spring roll (seafood and meat)
2. Vietnamese spring roll (vegetable)
3. Peanut sauce
Although all the ingredients necessary for cooking Vietnamese food are readily available in Southern California, availability varies seasonally, and thus so will the menu. For example, we will not have banana flower salad in the middle of the cold season. |
